How to Cook BBQ Rabbit RECIPE

We raise rabbits on our off grid homestead to have a renewable meat source for our family. Rabbits are easy to breed. They reach butchering age in 3-4 months. They are not loud. They do not require a lot of hands on time. Plus, they are easy to butcher.

If you are looking for a way to gain a little food security for your family, rabbit is a good way to go. It taste like chicken breast but on a bone, so it can dry out easily like chicken breast, but it needs to cook longer like chicken thighs. Because of this combination, many people do not try to even cook rabbit.

But, rabbit reproduces easier than chicken and it has more protein in it than chicken, so I believe everyone needs to include it into their meal plans.


Ingredients

1 Medium Rabbit broken down

1 Tbsp of Onion Powder

1 tsp of Garlic Powder

1/2 tsp of Paprika

1/2 tsp of Cumin

1/2 tsp of Salt

1/2 tsp of Pepper

1/4 Cup of fat of choice (Butter or bacon grease are recommended)

1/2 Cup of your favorite barbeque sauce

How to make

Preheat Oven to 400 F

Place your rabbit in a 9x9 casserole dish

Sprinkle seasonings, salt, and pepper on the rabbit.

Add your fat directly on top of the rabbit.

Cover with lid or aluminum foil.

Bake for 15-20 minutes.

Remove from oven.

Flip rabbit over and pour half of your barbeque sauce on to rabbit.

Bake uncovered for 10 minutes.

Remove from oven.

Check temperature, rabbit needs to cook to 160 F to be safe.

Flip rabbit and add the rest of your barbeque sauce to rabbit.

Bake uncovered another 5 to 10 minutes, or until 160 temperature is reached. Alternately you can broil for a few minutes to caramelize the barbeque sauce on to the rabbit.

Remove from oven and let rest 5 minutes.


Tips for Success with Cooking Rabbit

You always need to add fat to rabbit. It is an extremely lean meat.

Rabbit can dry out very easily. It does best cooked in a broth or sauce and to be served with a sauce.
